Healthy Pumpkin Muffin Recipe




There was no welcome Fall post because I don't like Fall. It's just a sad, brief segue to my least favorite season of them all. I am a Winter Scrooge. I can get excited about a season's food though. Apple Crisps, Pumpkin Pies, Squash, etc. So, this morning I tried out a pumpkin muffin recipe that turned out great. We've been on a bit of a health kick around here lately, so I changed things up a bit and here is what I came up with:

2 T Ground Flax Meal
6 T water
1 C pumpkin puree
1/2 C apple sauce
1 C All-purpose flour
2/3 C whole wheat flour
1 t baking soda
1 t cinnamon
3/4 t salt
1/2 t baking powder
1/2 t ground nutmeg
1/4 t ground cloves
1 C sugar
1/4 C old fashioned oats
1/4 C raisins (presoaked)
1/2 t vanilla

In a large bowl, mix Flax with water and let sit for 5 minutes. Mix in sugar, pumpkin, and applesauce. In a separate bowl, stir together all dry ingredients and add to the pumpkin mixture. Stir in raisins and vanilla. Spoon into prepared muffin tins (or loaf pan). Makes 12 large muffins.

Next time I'm going to add grated carrot.

I must make this ASAP. I love all things pumpkin and with all the healthy goodness in there, it sounds like a keeper!

You could also add one 1 and 1/8 cup of vanilla Protein powder and they'd be a great breakfast muffin. This recipe looks very close to the one I make (only it's pumpkin). I eat one muffin and one 8oz glass of skim milk. Keeps me full 'til lunch.
