Surprise! I made cookies. No, I made Surprise Cookies...

Marshmallow!

I have always wanted to try making my own marshmallows.  Every time I see it on a blog or Pinterest (what did we do before Pinterest?) they say they're better than store bought and they are right.  I love marshmallows and these are THE BEST.  Alton Brown's Recipe.

Backlog, sweets

I made these for Em's b-day.  I started with Kraft's Vanilla Mousse Cheesecake recipe (my favorite cheesecake) and made cupcakes out of them, then filled a piping bag with the mousse, dipped the tip in raspberry syrup as I frosted.  Yum.


I'm looking for a copycat for Kroger bakery's whipped frosting.  I like a good butter cream...but their whipped frosting...mmm...it's one of my favorites.  You know how I like to home make things so I tried this recipe.  It wasn't exactly what I was looking for but it was amazing.  I think it needs to be a bit sweeter, it tastes a little like Cupcake Station's french butter cream, as is, and I like my frosting a little sweeter and I'm not a huge sweet frosting person.  I like that this uses granulated sugar and not powdered, that's where I think a lot of frostings get too sweet.  The texture is silky smooth.

Backlog con't.

I made one big pita and baked it on the pizza stone.  I served it with homemade tzatziki, but the recipe wasn't exactly what I wanted.  The bread was yummy, though next time I'll try it with hummus.



This is from Mel's Kitchen Cafe.  I made this for a Sunday...we have late church this year so the slow cooker is paramount to our Sabbath happiness.  Once we walk in the door, dinner needs to be easy and fast.  This is the easiest slow cooker recipe I've tried.  Mel has you sear the chicken first, but I was feeling lazy so I put in frozen chicken tenders.  You could leave the onion out to make it even easier.  The flavor is a lot like sweet and sour chicken.  It came out sweet, sour and very tender.

Backlog

I have a backlog of recipes to share with you.  I'll share a few at a time in order to stretch out the posts.

I've always wanted to try making my own tortillas and thought I needed a tortilla press, but after seeing PWs tutorial and how thin she rolled them, I thought I could do it. I used half whole grain oat flour and shortening instead of lard.

I loved this soup, Tony loved this bread.  I really like spicy peanut sauce and sweet potatoes.  At first I thought this sounded like a weird combo but it is delicious.  The bread is a copycat recipe for Outback bread and Tony said it's his favorite that I've made.  I didn't have any rye flour so I substituted Graham flour which is just a course whole grain.  On a side note, soup is difficult to photograph.

Luck o' the Irish!




We had our St. Patrick's Day party a little early this year, but I thought I'd post today for St. Patty's Day.  We had our leprechaun scavenger hunt.  Lucky left us some golden popcorn kernels this year.  We did some green crafts, had a green feast and read a book about leprechauns.  Happy St. Patrick's Day!
