Hamburger Buns

I home make things because I like being home.  I don't like to schlep myself and my kids to the store, so I do it as few times as I can get away with.  Sometimes this means I make convenience foods from scratch.  I have tried buns a few different times and they've always been dense and chewy.  These buns are perfectly light and fluffy but have enough structure to hold your burger and fixin's.  I adapted the recipe slightly from Taste of Home.  I used the same ingredients, but let the dough rise for about a half an hour, and then shaped and let them rise on the baking sheet for another half an hour...then baked.  Delicious.

S'il Vous Plait

Jen got an awesome gift card to a crepe making class at our favorite crepe place.  I was lucky enough to get to go with her.  We had so much fun laughing and cooking and best of all, eating.  The owner of the shop taught us and she made it look so easy.  It was much harder than I thought.

My first crepe was my savory one, which was really sweet and savory, my favorite, it was Chevre and fig jam.  Seriously one of the best things I've ever eaten.  I know goat cheese seems weird but the soury saltiness of it...mmm...I just love it.  My sweet crepe was brown sugar and cream cheese with lime juice squeezed over it, kind of like key lime pie.  I am drooling just thinking about it.  I've been thinking about crepes ever since, I always do after I eat there.  I wish there was a crepe place closer to me so I could go all the time.

I've been looking at crepe makers and pans and spreaders online and I finally decided to try it on my own.  I made Alton Brown's crepe recipe and cooked them in my cast iron skillet.  It was difficult.

The first one just ripped, the second one was a little less ripped and the third one was decent but a bit too thick.  I need one of those spreaders.  I had just a tiny bit of batter left (I decreased by a third) so I made a little mini crepe.  It was delicious.  I filled it was mini marshmallows and nutella. Yum yum yum.

Crepes are so happy, like a little food smile.

George Washington

Do you remember this post?

My girl is growing up way way too fast for me.  A few weeks ago Lucy came home with her first real project assignment.  I'm a total nerd and was so excited for this.  She had to give a report on a President and she was assigned George Washington.  I wish I could show you the footage of Tony being George Washington in a school play as a kid.

We watched some biography channel videos on him and went to the library and collected some books.  Then we got to work.  I was a bit nervous about how she'd handle all the coloring and cutting and all...I wanted it to be her project, as hard as that was for me.

We had a lot of fun together.  It was a great time to talk about our country's heritage and founding.  She was excited to work on it and said, "I love George Washington and I love you."

She had to give an oral presentation with it, here she is practicing at home:

She gave her presentation on Tuesday and said it went great.

Valentine's Day!

We had a fun Valentine's Day this year...nothing too exciting but I made the kiddos Valentines, which was super fun for me, and then I made this Jello for Lucy's class.  Her teacher asked for a treat and I thought this would be a fun one.  I made a 9x11 pan but it wasn't enough so the morning of V-day before the playgroup party I made another 9x11 pan.  Man, I was cooling and pouring and cutting like a mad woman but I got it done in time, thankfully.

Lucy came home with the leftovers, I said, "How did it go?"  She said, "E. didn't like it and no one asked for seconds."  Great.  My life is complete. ;)

I took Noah to the playgroup Valentine's Party which was really fun.  Noah was not into it at all.  I made his bag for him and passed out his Valentines and while the other kids were playing games and hearing stories he was drinking all their juice.  That kid has a serious sweet tooth.

Tony and I had celebrated the week before by going out to dinner which was really nice.
These guys, jello lovers or not, are my favorite Valentines and I'm glad they'll always Be Mine.

Chocolate Cream Pie

My oldest nephew turned 15!  For the last few years he's asked for Chocolate Cream Pie for his birthday dessert.  I used to use a mix.  It was a seriously good mix.  They don't make it anymore. Of course.  I've tried a lot of different recipes to find one as good as that mix.  I even tried PW's which was really really good but this one...this one is the best I've tried.  It's really smooth and chocolaty and but too chocolaty.  I used Oreo crusts and topped them with Rich's whipped cream.

A little story about Rich's whipped cream.  I've been searching for a frosting recipe that is similar to Kroger's bakery frosting...I'm sure they use a mix.  Someone suggested Rich's Butter cream...but it's not butter cream, it's whipped.  So when I saw the Rich's Whipped at GFS I thought maybe that would be it.  It isn't.  It just makes a whipped topping very similar to Cool Whip but richer...ha ha.  Now I feel like I need to try the Butter cream to compare.

I also heard Pastry Pride is like the whippy frosting but I can only find it at Costco.  Online. By the case. :(

Anyway, try the pie, it's delicious, and sorry about the super lame picture.  I guess I'll just have to make more to photograph. :)

I cut her hair!

Every morning there is a lot of crying and whining during hair time and it drives me bananas!  I think she would be happy just leaving it tangly, I however, am not.  I hoped getting rid of those ratty split ends would help.  So, I watched this video and then went to Sally's and got some hair scissors and followed the instructions from the video exactly.  It went really well.  She got tired of holding still but I tell you this will not be her last, "Mom Cut," and I rue the day she wants to go to a real salon.  It ended up being a good experience for both of us.

I'm sorry to report there is still a lot of whining and crying at hair brushing time. :(
